Beef fried rice works best when the steak is treated as its own quick stir-fry: sliced thin against the grain, coated in a short soy and cornstarch marinade, then seared hot in small batches so it browns instead of steaming.
Once the beef is set aside, the rest comes together in minutes in the same pan: scrambled egg, onion and garlic, peas and carrots, cold rice and a simple soy and oyster sauce seasoning. The beef goes back in at the end so it stays tender.

Slice and marinate the beef
Slice the steak across the grain as thinly as you can (partly freezing it for 15–20 minutes first makes this easier), then cut into bite-size strips. Toss with the soy sauce, cornstarch, Shaoxing wine (if using), 1 tsp oil and black pepper. Let it sit for 15 minutes while you prep everything else.

Prep the rest
Stir the sauce ingredients together in a small bowl. Dice the onion, mince the garlic, slice the green onions and beat the eggs. Break up the cold rice with your fingers so there are no hard clumps. Keep everything within reach of the stove; the cooking moves quickly.

Sear the beef in batches
Heat the wok or skillet over high heat until it just begins to smoke, then add 1 tbsp oil. Spread half the beef in a single layer and leave it alone for about 1 minute to brown, then stir-fry for another 30–60 seconds until no longer pink. Transfer to a plate and repeat with the second batch, adding a little more oil if needed.

Scramble the eggs
Lower the heat to medium-high and add 1 tbsp oil. Pour in the eggs and scramble until just set but still soft, about 1 minute. Push them onto the plate with the beef.

Cook the aromatics and vegetables
Add the remaining oil, then the onion and the white parts of the green onions. Stir-fry for 2 minutes until the onion softens at the edges. Add the garlic for 20 seconds, then the peas and carrots, and cook for 1–2 minutes until heated through.

Fry the rice
Turn the heat back up to high. Add the rice and spread it across the pan. Let it sit for 30 seconds to toast, then toss and press out any clumps. Keep stirring and spreading until every grain is hot and a few are lightly crisp, 3–4 minutes.

Sauce, combine and serve
Pour the sauce around the edge of the pan so it sizzles, then toss to coat the rice evenly. Return the beef, any juices on the plate, and the eggs. Toss for about 1 minute until the beef is hot. Taste, adjust with a splash more soy if needed, and finish with the green onion tops. Serve right away.
Tips for the best beef fried rice
- Slice against the grain. Look for the long lines running through the steak and cut across them; this shortens the muscle fibers and is one of the biggest factors in tender beef.
- Don't crowd the pan when searing. A packed pan drops in temperature, and the beef stews in its own liquid instead of browning.
- Use rice that has been cooked and chilled. If you cook it the same day, spread it on a tray to cool quickly, then refrigerate it within 1 hour and chill until cold before frying.
- Add the beef back only at the very end. It has already cooked through during searing, so a brief toss to reheat keeps it from turning chewy.
- Pour sauce around the hot edge of the pan rather than onto the rice, so it sizzles and seasons evenly instead of making one wet patch.
